Raspberry Coconut Slice

Raspberry coconut slice — a classic and timeless treat.

Base Ingredients:

· 1/3 cup of self-raising flour

· 2/3 cup of plain flour

· ½ cup of caster sugar

· 90g of butter

· 1 egg

Topping Ingredients:

· 2 eggs

· 2 cups of desiccated coconut

· 1/3 cup of caster sugar


1. Preheat oven to 180C

2. Grease and line a 20cm square tin with baking paper

3. Beat butter, sugar and 1 egg in a small bowl — with an electric mixer — until combined

4. Sift the two flours and stir them into the mixture

5. Spread the mixture over the greased pan and bake for 10 minutes

6. For the topping, combine all ingredients in a medium bowl and mix

7. Once the base is cooked, spread the raspberry jam across the base and add the ‘topping’ you made earlier

8. Bake for a further 30 minutes or until golden

9. Let it cool in the pan

10. Enjoy!
