BLACKBERRY PARFAIT

INGREDIENTS

Blackberry Layer:

  • 1 ½ cups Coconut Milk

  • 1/3 cup Chia Seeds

  • 1 cup YV Fresh Blackberry

  • 1 tsp Vanilla Extract

  • Pinch of Sea Salt

Banana Layer:

  • 1 Banana, peeled and mashed

  • 1 ½ cups Coconut Milk

  • 1/3 cup Chia Seeds

  • 1 tsp Vanilla Extract

METHOD

  • For the blackberry layer: Mix all ingredients together in a bowl, mashing the blackberries.

  • For the banana layer: Combine the coconut milk, Chia Seeds and vanilla in a bowl. Stir well, then cover and refrigerate with the berry layer.

  • Distribute the blackberry and banana layers between 4 small mason jars. Top with additional berries.

  • Seal the jars with their lids and keep refrigerated for up to 3 days.
