Chestnut butter

Ingredients:

  • 1 cup of cooked and peeled Y.V. Fresh Loose Chestnuts or 1 pouch of Microwavable Y.V. Fresh Chestnuts

  • ½ cup of walnuts — can be purchased from Coles.

  • 2 tbsp of cooking oil

  • ½ tsp of salt

  • 3 tbsp of water

Method:

  1. Prepare Chestnuts by preheating oven to 200 degrees celsius. Use a sharp knife to cut a cross in the top of the chestnuts, place them in a baking pan and roast for 20 minutes in the oven. Remove shell. Alternatively, follow instructions on Y.V. Fresh Microwavable pouch.

  2. Use the same baking pan and heat from oven to give the walnuts a little roast, approximately 5 7 minutes or until they look golden.

  3. In a high speed blender add walnuts and chestnuts and blend until a very fine texture. Then add oil, salt, water and pulse until a perfect creamy texture is formed. Season to taste.

  4. Keep the butter in a jar in the fridge for up to 2 weeks. Enjoy!
