Chicken, waffles and blackberry compote
Make the ultimate “dude food” with a gourmet twist! This Chicken, waffle and berry compote recipe is the perfect blend of sweet and salty!
1 ½ cups Bread crumb
2 x Eggs
1 cup flour
Salt and pepper
2 cups self raising flour
1/4 teaspoon salt
1/3 cup vegetable oil
1 3/4 cup milk
1 tablespoon butter
1 tablespoons sugar
1 x 125 gram punnet y.v.fresh blackberries
½ cup brown sugar
½ cup water
Begin by preparing the chicken for crumbing. In a bowl, crack two eggs and whisk together. Add roughly ½ a teaspoon of salt and pepper in the mixture and mix well. In flat separate plates add bread crumb and flour.
Coat chicken breast in flour before dipping it in the egg mixture and then into the bread crumbs. Repeat this process twice for ultimate crunch factor.
Heat up vegetable oil in a pan and fry both sides of the chicken until golden brown. Place chicken pieces in a tray and bake in the oven for 10 minutes so that the chicken is cooked all the way through.
Whilst chicken is baking, turn on waffle maker and allow to heat up. In a large bowl, sif your dry ingredients before adding milk, melted butter and whisked eggs. Thoroughly mix together until there are no bumps in the batter. Pour into your waffle maker and close the lid allowing it to cook until golden brown. Take out of the waffle maker and allow to cool.
Turn off the oven and leave the door slightly open so that the chicken stops cooking. In a saucepan. Add berries, sugar and water and allow to cook until the mixture slightly thickens. Take off the heat.
Lastly assemble your meal together. Place waffles on a plate with the chicken pieces on top and drizzle berry compote on top.
