Blueberry Pancakes

What better breakfast on a lazy Sunday morning than blueberry pancakes? This recipe uses Y.V Fresh blueberries to make the best breakfast when you’re craving something sweet.


  • ½ cup of Y.V. Fresh blueberries

  • 1¼ cups all-purpose flour

  • ½ teaspoon salt

  • 1 tablespoon baking powder

  • 1 tablespoon white sugar

  • 1 teaspoon vanilla extract

  • 1 egg

  • 1 cup milk

  • ½ tablespoon butter, melted

  • If desired, serve with maple syrup


  1. In a large bowl, sift together flour, salt, baking powder and sugar. In a small bowl, beat together egg, milk, vanilla and melted butter. Make a well in the center of the dry mixture and stir milk and egg into flour mixture; mix until smooth.

  2. Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle into desired size. Brown on both sides.

  3. Serve hot with a handful of Y.V Fresh blueberries on top and splash of maple syrup if desired.
