Stuffed Chestnut Mushroom


  • 12 YV Fresh chestnut mushrooms

  • 180 g Sun dried tomatoes

  • big handful of fresh basil

  • 100 g pine nuts

  • 2 tbsp tahini

  • juice of 1 lime

  • salt and pepper

  • Cheese


  • Preheat the oven to 200oC.

  • Remove the stalks from the mushrooms and place the mushrooms on a baking tray.

  • Cut up the sun dried tomatoes and basil and mix with the pine nuts, tahini, lime juice, salt and pepper.

  • Stuff the mix into the mushrooms and drizzle some mushroom on top

  • Bake in the oven for 15-20 minutes until the mushrooms are soft.
