Red cherry Rocky Road

  • 750 grams white chocolate

  • 2 ½ cups pink coloured marshmallows

  • 2 tsp vanilla extract

  • 2 cups Y.V.Fresh cherries

  • 1 cup pistachios


Line a medium slice tin with baking paper (30cm x 20cm). Melt chocolate in a dry heatproof bowl over a pot of simmering water or microwave in 1 minute intervals, stirring until melted. Remove from heat and stir in all other ingredients. SPoon into the prepared tin and refrigerate until set. Cut into chunks or slabs and store in a cool place.
