Blueberry loaf

For your Blueberry Loaf you will need...

  • 2 eggs

  • 1 cup of white sugar

  • 1 cup milk

  • 3 tablespoons of vegetable oil

  • 3 cups of plain flour

  • 1 teaspoon of salt

  • 4 teaspoons of baking powder

  • 1 cup of fresh Y.V.Fresh blueberries

  • 2 teaspoons vanilla essence



  1. Preheat oven to 175 degrees celsius

  2. In a smaller bowl mix together beaten eggs and sugar. Then add in the milk, vanilla essence and vegetable oil.

  3. In a larger bowl sift together flour, salt and baking powder.

  4. Pour the liquid mix from the smaller bowl into the larger bowl and combine mixtures until blended. Then carefully add in the fresh blueberries.

  5. Pour the mix into a greased 5 x12 inch loaf pan and put into the 175 degrees celsius for about 50 - 60 minutes or until the metal spatial comes out clean of the center of the cake clean. Let it cool in the pan for about 10 minutes before moving from pan from to the wire rack.
