Y.V.Fresh Chestnut Stuffing


As winter continues to get colder and colder, we all start to crave hot, hearty meals to keep us warm. Roasts have long been family favourites and everyone has their own way of making a roast spectacular. Today we decided to share our secret to a great roast chicken and that would be our flavoursome chestnut stuffing made with Y.V.Fresh chestnuts! It is so good you will be eating it on its own by the spoonful.

You will need:

1 pack Y.V.Fresh Chestnuts

2 tablespoons Butter

1 Onion

3 cloves Garlic

½ loaf Bread with mixed seeds (or breadcrumbs)

1 Carrot

1 Zucchini

Begin with roasting Y.V.Fresh Chestnuts in an oven until their shell begins to split open. Take them out of the oven and let cool before you peel the outer shell off.

Next chop the chestnuts in half and blend them together in a food processor. Take half a loaf of seeded bread (of your choice), place in the food processor with the chestnuts and proceed to blend it until it comes out looking like breadcrumbs.

Next lay the mixture on a tray, lightly salt and pepper it before grating parmesan cheese on top. Bake in an oven until on 150 degrees celsius until golden brown. Take out of oven and let cool.

Grate carrot and zucchini. Finely chop onion and garlic. In a pan, melt 2 tablespoons of butter before adding onion and garlic. Cook until they have browned and then add carrot and zucchini.

Once carrot and zucchini have softened, add the breadcrumb-chestnut mixture and salt and pepper to taste. Mix all the ingredients until are evenly combined.

You can then add the stuffing to your roast or even put it on a separate tray and bake it in the oven for an extra 5-10 minutes. Garnish with rosemary for an extra kick.
