Chewy Chocolate Chestnut Brownies

Give a family favourite bit of a nutty crunch with Y.V.Fresh chestnuts. Our chewy chocolate brownies are soft and gooey, with a crunch of roasted chestnuts to break up the rich chocolate flavour.

  • 125g unsalted butter

  • 300g white sugar

  • 3 eggs

  • ½ cup chopped roasted Y.V.Fresh chestnuts

  • 110g plain flour

  • 30g Cocoa powder

  • 125g dark chocolate

  • 1 teaspoon vanilla extract

  • Pinch of salt

To begin, preheat oven to 150 degrees.

Place fresh Y.V.Fresh chestnuts on a flat tray and in the oven to roast for 10 minutes or until chestnut shell starts cracking and breaking open. Take out of the oven and put aside to cool down. Turn up heat of oven to 180 degrees.

Whilst oven is heating up, lightly whisk three eggs and place them to the side. Peel chestnuts and chop them up into chunky pieces.

Chop up butter and chocolate and place them in a heatproof bowl on top of a simmering saucepan. Make sure the bowl is slightly bigger than the saucepan so it does not touch the water. Stir the butter and chocolate until they are both melted and properly combined, then remove them from the heat.

Add eggs, flour, sugar, vanilla extract, salt and cocoa powder and stir ingredients together.

Once the ingredients have been all mixed in together, add in chopped up chestnuts and fold them evenly into the mixture.

Pour mixture into greased and lined 20cm square cake tin and place in oven.

Bake for 25-30 minutes.

Take out of oven, let it cool, chop into squares and serve with vanilla ice cream.
