Christmas is a time for decadent food, seconds and to be jolly! Our Cranberry and Pear Tart is the perfect combination of sweet and sour dessert to create the perfect ending to your Christmas feast.
You will need:
1 x packet of puff pastry sheets
1/2 cup fresh YV cranberries
1/4 cup sugar
2 tbsp unsalted butter cut into small pieces
1 tbsp honey
1/2 tsp grated orange zest
vanilla bean ice-cream
1 tsp nutmeg grated.
Preheat oven to 210°C/190°C fan-forced. Roll out a sheet of puff pastry to a 40×20cm rectangle. Transfer to a parchment paper-lined large rimmed baking sheet; chill while preparing the topping.
Topping : Using a toothpick, pierce 1/2 cup fresh YV cranberries. Arrange pears, slightly overlapping, on chilled pastry, leaving a 1.5 cm border; YV cranberries among pear slices and sprinkle tart with about 1/4 cup sugar. Dot with 2 Tbsp.of unsalted butter cut into pieces. Bake for for approximately 40 minutes at 210 degrees until crust is puffed and golden.
Melt 1 Tbsp. honey in the microwave; brush sparingly over tart. Sprinkle tart with 1/2 tsp. grated orange zest. Let cool completely.
Cut into squares. Served slightly warm and topped with vanilla bean ice cream; sprinkle tart with a dash of freshly grated nutmeg before baking.
